Little Chicky

I had the afternoon off to prep for some medical test tomm. I am trying very hard to keep my mind off of eating and food. Why is it I can go all day without a bite ,but tell me not to eat and I am starving!
I thought I'd share a few photos I took of our new cute little chicks and a great recipe.
NOTE NOTE.... We DO NOT eat our chickens they are used only for there fresh eggs!!

They can have either 4 or 5 toes on each foot.



DRUNKEN CHICKEN (aka beer-can chicken)

If you do not want to use beer...orange soda works really great!
1 chicken, whole
Creole seasoning
3 ounces beer
1 teaspoon liquid crab boil
Clean chicken and pat dry. Sprinkle inside and out with Creole seasoning. If I have time I prepare the night before and put them in a ziplock with Italian Dressing and Lousiana hot sauce.
Light a charcoal grill and bring temperature to hot.

Meanwhile, pour a can of beer into a measuring cup. Measure 3 ounces and pour it back into the can. Add crab boil.

When fire is ready, place chicken on top of beer can so that the chicken is sitting up with legs just touching the grill with the can inside the cavity of the chicken. Cover grill and cook for one hour and 20minutes. Do not open grill during cooking. The result should be a very moist chicken. Several chickens can be cooked like this at one time –just line them in a row over the fire.

Note: A handful of wet hickory chips can be placed over the coals after they’re hot to import a more smoky taste.

  5. Thank you for sharing the recipe. I always wondered how they did beer chicken. Think I will try the orange soda...orange just sounds good!

  7. I would also love to get some chickens for the eggs...(I was just thinking about how sad it is to show baby chicks and then talk about cooking them when I read your note about your chickens being used for the eggs :o)***whew***
